Avocado BLT Grilled Cheese (Printable)

A decadent BLT variation with crispy bacon, fresh lettuce and tomato, creamy avocado, and melted cheese on buttery bread.

# What You'll Need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper to taste

# Steps:

01 - Cook bacon slices in a skillet over medium heat until crispy, approximately 5-7 minutes. Transfer to paper towels to drain.
02 - Lightly spread softened butter on one side of each bread slice.
03 - Place two bread slices buttered side down on a clean surface. Layer each with cheese, bacon, lettuce, tomato, and avocado slices. Season avocado and tomato with salt and pepper. Top with remaining cheese slices and bread slices buttered side up.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place assembled sandwiches in the skillet and cook until golden brown and cheese is melted, approximately 3-4 minutes per side, pressing gently with a spatula.
05 - Remove sandwiches from skillet and let cool for 1-2 minutes. Slice in half diagonally and serve immediately.

# Chef’s Tips:

01 -
  • It combines every texture you want: creamy avocado, crispy bacon, melty cheese, and that perfect crunch from golden bread.
  • You can make it in twenty minutes with ingredients you probably already have, no fancy techniques required.
  • It feels like comfort food and a splurge at the same time, satisfying enough to be dinner but fun enough for a midnight snack.
02 -
  • Pat your tomato slices dry with a paper towel before adding them, otherwise they'll release moisture and turn your bread soggy halfway through cooking.
  • Don't rush the heat, medium-low gives you that perfect balance of melted cheese and crispy bread without any burnt spots.
  • If your avocado is too firm, it won't spread that creamy richness through each bite, wait a day or give it a gentle squeeze test before you commit.
03 -
  • Press gently with your spatula while grilling, it helps the cheese melt evenly and keeps all the layers together without squishing out the fillings.
  • If your skillet isn't big enough for both sandwiches, cook them one at a time and keep the first one warm in a low oven while you finish the second.
  • Use a serrated knife to slice the sandwich in half, it cuts through the crispy bread without crushing the soft avocado inside.
