16 - 1 cup shredded lettuce
17 - 1 medium tomato, diced
18 - 1/2 cup sour cream
19 - 1/3 cup chopped fresh cilantro (optional)

→ For Assembly

20 - 4 large (10-12 inch) flour tortillas

# Steps:

01 - Heat olive oil in a large skillet over medium heat. Add onion and cook for 2-3 minutes until softened. Add garlic and cook for 30 seconds.
02 - Add ground beef to the skillet and cook, breaking up with a spoon, until browned, about 5-6 minutes.
03 - Stir in cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute to release aromas.
04 - Incorporate tomato paste and water, stirring to combine. Simmer for 3-5 minutes until slightly thickened, then remove from heat.
05 - Heat tortillas in a dry pan or microwave until soft and pliable.
06 - Lay each tortilla flat and layer with one-quarter of the rice, beans, beef mixture, cheese, lettuce, tomato, and a dollop of sour cream. Sprinkle with cilantro if desired.
07 - Fold in the sides of each tortilla, then roll tightly from the bottom to enclose the filling securely.
08 - For a crispier surface, toast burritos seam-side down in a dry skillet for 2 minutes before serving.

# Chef’s Tips:

01 -
  • Everything comes together in under an hour, and the beef stays flavorful without any complicated techniques.
  • You can prep most ingredients ahead and let people build their own burritos, turning dinner into something interactive.
  • The seasoning hits differently when you layer it right—spiced beef against cool sour cream and fresh cilantro creates this perfect balance that keeps you reaching for another bite.
02 -
  • Don't skip the warmth step for tortillas—cold, stiff tortillas will tear when you try to roll them, and no one wants a burrito that falls apart before it reaches their mouth.
  • The spice balance matters more than the exact amounts—if you prefer more heat, add extra chili powder or throw in some jalapeños; if you like it milder, ease back on the paprika and skip the black pepper.
  • Sour cream is the secret to preventing the burrito from tasting too heavy or one-dimensional; it cuts through the richness and brings everything into harmony.
03 -
  • Cook your rice and beans the day before if you're meal prepping; it saves time and lets flavors settle.
  • Keep your tortillas warm and covered with a clean kitchen towel while you assemble everything—cold tortillas are the enemy of a good roll.
